Wet snow, slushy roads, bitter winds and freezing rain… I think Tim Horton’s has good reasons for starting their Roll-Up-The-Rim season in January. What better way to fight the cold than with a steaming cup of coffee?!!! Especially when you might win a car, or, better yet, another coffee? (By the way, they did not pay me to say that!:))
My very first cup this season won a free coffee, and I was waiting for the perfect time to redeem it. So yesterday at lunch, a friend and I decided we’d both go get our free coffees. So, of course, we each got an extra large! (Hey, it’s free… Might as well take what you can get!)
However, I didn’t actually drink it all, because it was too hot, and, I’ll be honest, I was hearing Mom warn me about the dangers of too much coffee (“You won’t sleep, you’ll get all shaky,” etc. You get the drift.) So, I left most of it in the cup and stuck it in the fridge when I got home. I should mention though, that I did put it in a different mug, in an attempt to disguise it so Dad wouldn’t drink it before I get a chance! 😉 I had special plans for that cup of cold coffee!

With only three ingredients, this recipe is sure to be a hit, but feel free to add extras like milk, yogurt, vanilla, cocoa powder or cinnamon. I didn’t have milk or yogurt in the fridge, so I just had a piece of toast with the smoothie, because I’ll admit, it isn’t real filling… Go ahead and adjust it to your liking, but it’s truly delicious this way! 🙂
